COOKING

  • Prep: Wash all of the dishes. Take out steamers for buns, two griddles for dumplings, frying pans for scallion pancakes, pot or deep fryer (deep fryer might not work) for the spring rolls, chafing dishes to back stuff and hold food. 2 pots for milk tea (two big, or one big one small). Water boiler for milk tea. Get ice for milk tea. Set out two plastic cups of oil for scallion pancakes and dumplings. Preheat the oven for youtiao!
  • Milk Tea: DO THIS FIRST because tea has to cool. Fill water boiler and start heating water. Put a layer (about an inch or two) of water in a big pot and start heating up. Keep filling with water from the boiler. When there is enough water (leave room for ice) put the tea bags in (debate on whether we should tie tea bags). Let soak. TURN OFF HEAT BEFORE PUTTING IN CONDENSED MILK. Mix and add ice.
  • Dumplings - cook on the griddles. Plug in, with temp set to 400 degrees (?). Apply oil liberally and make sure its hot. Put dumplings on the pan. Cook for a bit. Pour water in until the level covers most of a dumpling. Cover with lid and cook until water is mostly gone.
  • Scallion pancakes - Cook on a pan with oil. Set heat to around 7 or 8? Cook until nicely brown. Set in chafing dish covered with paper towels. Cut with scissors into smallish pieces. Try not to use too much oil.
  • Buns - Fill bottom of steamer with 2 and a half inches of water. Put the layers of the pot in and heat. Put buns inside. (NEEDS EDITING?)
  • Youtiao - Put in oven for 5 minutes. We used chafing dishes!
  • Note: Buns and Youtiao cooled down really fast. In the future, should put them in the oven to keep warm. (Use Penthouse, because country kitchen oven is broken). Also, youtiao takes a lot longer than 5 minutes to actually get crisp.
